Curry Mixture is a pantry essential for home cooks who want rich Sri Lankan-style flavor without complication. The blend is aromatic, rounded, and versatile, making it easy to build depth in curries, lentils, vegetables, and marinades.

Use this curry mixture to prepare meat, fish, or vegetable dishes.
Wash and cut the meat or fish into desired pieces. Mix with the curry mixture along with turmeric, curry powder, cinnamon, cloves, and cardamom (add chilli powder if a hotter curry is desired).
Heat a small amount of cooking oil in a saucepan, add chopped onions, garlic, mustard seeds, fenugreek, and curry or bay leaves, and fry until lightly browned.
Add the meat or fish, then add water or coconut milk if desired. Season with salt to taste and cook over moderate heat until fully cooked.
Add sliced tomatoes if required before serving.
